Overview
Foodborne illness occurs throughout the world, including within the United States. One way to reduce the risk of foodborne illness is to practice safer food handling processes and to identify which foods are most likely to be associated with foodborne illness.
In this assignment, you will learn more about foodborne illness and create a report. To do this, you will use the following materials:
a 1-minute video clip of Alyssa Milano speaking on food safety
the Partnership for Food Safety Education website
Centers for Disease Control and Prevention (CDC): Food Safety website
Instructions
Step 1:
Watch the video Alyssa Milano on Food Safety.
Step 2:
Access information related to safe food handling at fightbac.org and the CDC website. Although you may browse the entire site, you should focus the majority of your time reading the sections entitled “Clean,” “Separate,” “Cook,” and “Chill.”
Step 3:
Research a recent outbreak of foodborne illness in the news and write a written report. Although you may include additional information, the following information is required in your report:
news source
date of news report
number of individuals affected
food source
microorganism causing the illness
symptoms of illness
how this foodborne illness could have been prevented
Step 4:
Within the written report, you should also address these points:
Define foodborne illness in your own words.
Identify a favorite food that would be classified as a potentially hazardous food
Give examples of cross contamination of food
Provide at least one recommendation from each of the four core practices (e.g., prior to cooking, store chicken in the refrigerator at 40 degrees F or lower).
